
Like any skill, there are plenty of ways to learn cuisine.
A private teacher would obviously be a more efficient way to go–individual attention, you get to learn the same dish over and over until you get it right.
But the fact is that cooking is hard and distinctly glamorous work. The vast majority of the people who go into it are not following their artistic dreams, they’re looking for a steady income. If you want to see this world, you have to learn the way most people do, in a school like this. The experience is not for the faint of heart, but it’s something I wouldn’t have missed for the world.
